ArcGIS Spatial Analyst is an extension that allows you to create, query, map, and analyze cell-based raster data and perform integrated vector-raster analysis. 
ArcGIS 3D Analyst is an extension which provides a suite of high-quality, easy-to-use tools for creating, analyzing, and visualizing surface data and other three-dimensional data.
ArcPress Extension is a graphics metafile rasterizer that enables you to output high-quality maps on today's high-quality raster plotting devices.
Geostatistical Analyst Extension provides advanced spatial modeling tools for generating surfaces.  (version 8.x only)
ArcGIS Publisher Extension is an extension to ArcView, ArcEditor, and ArcInfo that converts map documents (MXD) to published map files (PMF).
ArcScan is the raster-to-vector conversion extension to ArcInfo, ArcEditor, and ArcView.
